Something for the weekend Sir!
Mexican style, baby back ribs.
Start with a Mexican spice rub and a drizzle of lime juice coat the ribs then let them settle in the oven for a couple of hours to take on the rub flavours. Finally add a basting of the barbeque sauce before quickly going on the grill for 10 mins turning and basting as you go. You have produced the most moist tasty ribs with a real depth of BBQ flavour.
Ingredients

1 Kilo + of pork baby back ribs

Juice of 1 lime

100ml homemade BBQ Sauce
-
¼ cup lime juice;



Ingredients for the rub

2 tbsp. paprika
-
1 tbsp. chilli powder
-
1 tsp. cumin powder
-
1 tbsp. dried oregano
-
2 tsp. garlic powder
-
1 tbsp. lime zest
Prep 15 mins

Preheat your oven to 300 F.

In a bowl, combine all the ingredients for the rub and mix well.

Coat the ribs with the lime juice and dry rub.

Wrap the ribs tightly with foil and bake in the oven for 2 hours.

Preheat your BBQ or grill to a medium heat.

Generously brush the ribs with barbecue sauce.

Grill for 10-15 minutes. Halfway through, turn the ribs and baste with more barbecue sauce
Homemade BBQ Sauce:-
-
1 onion, minced
-
1 clove garlic, minced
-
1 small can tomato paste
-
100ml apple cider vinegar
-
100ml cup water
-
25ml homemade ketchup
-
3 tbsp. English mustard
-
1 tbsp. Soy sauce
-
1 pinch cinnamon
-
1 tbsp. Smoked Paprika
-
Hot sauce or chillies as you like!
You can make a batch of this BBQ sauce and freeze the remaining if you wish.
Firstly fry off the onions for a few mins until translucent, add the garlic for a further minute, now add the rest of the ingredients and gently simmer for half an hour, topping up with water and or hot sauce to get the consistency you fancy.
Garnish with chopped Apple, blueberries, coriander and spring onions
