Something for the weekend Sir!
South African Potatoes
Simple and absolutely brilliant potato dish! Golden brown and slightly crispy potatoes, work as an alternative to traditional roasties or instead of chips.
Ingredients – Serves 8 ish

2.5 kilo of Maris Piper potatoes

1 pack of Knorr dried French onion soup mix (Or substitute chicken noodle as onion is often unavailable)

250g unsalted butter

Handful of coriander
Prep 10 mins

Preheat oven to 180 c

Cut each potato in half and place each half flat side down on a chopping board.

Then, every 5mm, cut down into the potato about 2/3rds of the way down, so that you don't reach the bottom!

Place each half, flat side down on a backing tray.

Melt butter in a mixing bowl for a minute in the microwave. Once the butter has melted, pour in the dried soup mix and stir.

Now with a desert spoon, spoon about half the butter and soup mixture over the potatoes and place in the oven.
Cook 1 hours

Cook the potatoes for about an hour, basting every 20 mins with the remainder of the butter soup mix.

As the potatoes cook they will open slightly on your 5mm slices allowing the butter mix to penetrate the potato and crisp the edges. After the hour they will turn golden and slightly crispy, perfect.

Serve in a dish and garnish with roughly chopped coriander. Chopped chilli if you wish!
